These amazing carrot cake energy snacks are a delicious and nutritious way to treat your next attack. It's packed with health-promoting foods like oats, nuts, dates, and carrots to give you energy throughout the day.
INGREDIENTS
- 1 large carrot, peeled and chopped
- 1 cup old-fashioned rolled oats (gluten-free)
- 1 cup pitted medjool dates
- 1/2 cup pecans
- 1 cup unsweetened shredded coconut, divided
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground nutmeg
Instructions
In the bowl of a food processor, add carrots. Break it into small pieces.
Add oats, dates, pecans, halved coconut, vanilla extract, cinnamon, ginger and nutmeg.
Mix until the mixture looks like bread crumbs and starts to stick together.
Remove leaves from food processor and set aside.
Take the mixture and roll it into one-inch balls.
Roll each ball evenly into the remaining coconut.
Serve immediately or refrigerate for up to 5 days.
